Raw Red, White and Blue Cobbler

This dessert is rich with fresh, sparkling flavors, real nutrition, and you wont even have to heat your oven!                                                                    

Ingredients:

crumble

2 cups nuts (soaked and air dried)

3/4 cup dried coconut, unsweetened, shredded

1 teaspoon fresh orange zest

1/2 teaspoon cinnamon

1/4 teaspoon sea salt

1/3 cup prunes, chopped

filling

1 ½ # fresh strawberries, destemmed (or use frozen)

1/3 cup fresh orange juice

8 dates, pitted

2 tablespoons honey

1 c blueberries

½ c cream (or coconut cream)

 

crumble: Place the nuts, coconut, orange zest, cinnamon, and salt in a food processor, and process until coarsely ground. Add the prunes, and process until the mixture resembles coarse crumbs. Set aside.

Filling: Take about two-thirds of the strawberries, chop them and set aside in a large bowl. Then, place the rest of the strawberries along with the orange juice, dates, and honey in a blender and process until smooth. Pour into the bowl with the chopped strawberries, add the blueberries and stir.

To assemble the crisp, sprinkle 1/2 of the cobbler crumble ingredients into an 8-inch square glass-baking dish. Spread the strawberry filling on top. Sprinkle the remaining cobbler crumble on top of the strawberry filling. Serve at room temperature with a dollop of whipped cream or coconut cream
